Pumpkin Pie Oatmeal

Yeilds 2 Servings

Ingredients
  • ⅔ cup steel cut oats
  • 2 cups coconut milk
  • ½ tsp. vanilla extract
  • ½ cup pumpkin puree
  • ½ Tbsp. chia seeds
  • Pinch of sea salt
  • ½ tsp. cinnamon
  • ¼ tsp. ginger
  • ⅛ tsp. nutmeg

Directions
1. Heat the oats and coconut milk in medium sized pot to boiling

2. Turn down to simmer and add pumpkin and chia

3. Simmer for 5-7 minutes

4. Add Remaining spices, stirring regularly

5.Simmer for additional 5-7 minutes
